The Medium Sashimi Knife features a 10.5 inch single bevel blade that is hand forged from two layers of steel and has an AUS-8 edge. Its long thin blade makes it ideal for filleting a medium-sized fish (that is, up to 2 feet long). The single bevel blade allows the user to thinly slice a raw fish fillet in a single stroke. Additionally, this knife can be used for raw boneless protein- for example, tontoro pork.
