Small Sashimi Knife

The Small Sashimi Knife features a 9.5 inch single bevel blade that is hand forged from two layers of steel and has an AUS-8 edge. Its long thin blade makes it ideal for filleting a small fish (that is, up to a foot long). The single bevel blade allows the user to thinly slice a raw fish fillet in a single stroke. Additionally, this knife can be used for raw boneless protein- for example, a chicken breast.

This knife includes free sharpening from Kikuichi Cutlery and is covered under their manufacturer's warranty. It is made in Japan and has a 9.5 inch soft stainless steel blade. Note that this knife must be hand-washed in warm water with mild detergent.
